“Brindisi” is Rod Volbeda’s mother’s maiden name. That’s why this superb, 100% jersey milk Fontina gets a little extra TLC. One of Italy’s great cheeses, Fontina has been made in the Alps since the 12th century. Our young Brindisi Fontina is an excellent table cheese and a superb compliment to bolder wines. We think it’s a great cheese to cook with and have been thrilled with the results when melted into a rich fondue. Ask us for our recipe.
