We salt it in the vat, then hard-press it. In contrast to other Jack cheeses, Willamette Valley Cheese Company’s Eola Jack has a natural, burnished golden color.
Our Eola Jack is an astoundingly versatile, semi-hard cheese that becomes stronger and drier as it ages. Its roots trace back to Mid-20th Century northern California where it was first made. Willamette Valley Cheese Company makes Eola Jack plain, peppered (zesty, but still mild), seasoned with herbs, or with jalapeno peppers (with a slight bite, zesty and spicy).
It’s excellent in sandwiches and superb melted over casseroles and other hot dishes. Eola Jack is a fine compliment to meals and a farmstead cheese that will earn compliments from your guests. It’s wonderful for light snacking or served with desserts and Eola Jack pairs quite nicely with lighter wines. There are hundreds of Jack cheeses on the market.
